On the other hand, are these ferrite cores good to make chokes in Royer IH? Does their performance are the same as toroid cores? I'm not good with these things myself (and magnetism in general), so while we are at it, can you explain the functionality of each of these cores?

Yes I live in Denmark, I can do world wide shipping 8€ for 500g and 16€ for 2000g! When it gets heavier than that I have to find a specific shipping price.

These cores are primarily for medium power inverters up to kW range for the largest ones.

E cores can be used for lower voltages, below 1kV or could make some good large gate drive transformers

U cores are for high voltage transformers and high power transformers.

it is the largest I have left, I do not have any specific datasheet for these, but you can find a similar datasheet for the same material type from ferroxcube or others.

But generally for a similar material, like 3F3, its in the ball park of 100-400 kHz for 80-150 kW/m^3

What might a suitable bobbin be for it?

The center leg is 20 mm wide, and 30 mm long. The outer two legs are 10 mm.
The gap is thus (80-20-2*10)/2 = 20 mm wide.

The width of the core is 20 mm.
